Nashville Earth Day Restaurant Challenge

Take your taste buds on a sustainable food journey with the Nashville Earth Day Restaurant Challenge!

From April 12-20, select Nashville-area restaurants will showcase a prix fixe meal or menu special that incorporates elements of sustainability like low or zero waste or organically produced, sustainably recovered, or locally sourced ingredients. Participating restaurants include 1 Kitchen Nashville, Butcher and Bee, Miel, Radical Rabbit, Smokin’ Oaks, and the Sunflower Cafe.

Participating restaurants and their menu special: 

  • 1 Kitchen Nashville – UGL Shishito Peppers: Bourbon Barrel Smoked Togarashi, Green Onion, Hot Honey
  • Butcher & Bee – Pan-Seared Cauliflower with miso bagna cauda and cauliflower crunchies, a vegan dish using the entirety of the cauliflower. (Updated on 4/16/24)
  • Miel
    • Miel Garden Greens: Green Goddess Dressing, Pickled Grapes (pickled from last summer’s fruit harvest at Farmer Dave, Beth Page, TN), Pistachios & House-made Ricotta Salata (from local milk)
    • Sauteed Miel Garden Greens: Gold Rush Apple (Farmer Dave’s from BethPage, TN), Root Vegetable Chips (all local farms), Walnut-Champagne Vinegar
  • Radical Rabbit – Zero-Waste Earth Mama Plate: Smothered Tofu/Mushroom in Savory Glaze, Broccoli Pesto (chickweed, ramps, spinach, basil, broccoli stalk), Purple Cabbage, Collard/Kale Greens, Mashed Potatoes and Gravy made from food/mushroom scraps, Kale Buds
  • Smokin’ Oaks – UGL Honey Rosemary Ham Sandwich, made only with local, sustainably sourced ingredients
  • Sunflower Cafe – Vegan Smoky Bean Bowl: Bean of The Day, Sesame Kale & choice of Garlic Aioli or Sriracha Aioli
