Urban Green Lab’s own Diana Andrew was selected to write an article on food waste in Local Table Magazine’s Special Green Issue this April. Diana holds an M.S. in Sustainable Food Systems and was newly appointed as the Assistant Director of the Nashville Food Waste Initiative.
Reducing, Rescuing, and Recycling Food Waste
Up to 40% of the food we produce in the United States goes uneaten. For a family of four, that costs around $1,800 per year. When we waste that food, we waste all the water, energy, agricultural chemicals, labor and other resources that go into growing, storing and transporting it. The good news is that the federal government has set a national goal of reducing food waste by 50% by 2030 and everyone in Nashville can participate.
